Tasha’s Dip

Tasha may be family, but her dip is a legend! A refreshing mix of black beans, corn, tomatoes and a squeeze of lime, this dip will be the life of the party. Don’t forget the chips, because once you dive in, you’ll be going back for more.

Ingredients

  • 1 can black beans, drained
  • 1 can Shoepeg corn, drained
  • 2 cups fresh Roma tomatoes, diced
  • Several sprigs of fresh cilantro, chopped
  • Juice from one fresh-squeezed lime (use according to taste)
  • Salt and pepper to taste
  • Diced fresh avocados (optional)
  • Tortilla chips for dipping

 

Directions

Combine all ingredients, except chips, in a large bowl. Allow to marinade for at least 30 minutes. Serve with chips for dipping.

Tip: If you skip the avocados, this dip stores well overnight in the refrigerator.
